It can be surprisingly hard
to find a good vegan salad dressing. And dressings are
notorious for having hidden MSG in them. This is quick and
easy. It's best to make up a little when you need it, since
olive oil doesn't refrigerate well.
Mix together about equal amounts of
olive oil and lemon juice (2 to 3 tbsp. of each). You can use juice from fresh lemons
or the reconstituted type in a bottle.
Add:
a shake or 2 of Italian
seasoning
a clove of garlic, pressed
through a garlic press
a little salt
Stir it all up. See if it's
too lemony or has too much oil taste, add the other ingredient
till it's the way you like it.
